On The Go Bar
(6 servings)
Ingredients:
- 1/4 cup crushed raw almonds
- 1/4 cup almond butter
- 1/4 cup cashew butter
- 1/2 cup raw shredded coconut, no sugar added
- 2 TBS agave nectar
- 2 TBS flax seeds
- 1/4 cup dried cranberries, no sugar
- 1/2 cup dried apricots, no sugar
Start by re-hydrating dried fruit. To do so, place dried cranberries and apricots in a bowl and cover with boiling water. Set aside for 10 min.
While that sits, combine remaining ingredients (raw almonds through flax seed) in a food processor.
Remove the cranberries and apricots from the water and pat dry with a kitchen towel. Roughly chop them into bite sized pieces and add them to the food processor.
Only blend until the mixture looks combined, about 20-30 seconds. The mixture should be well blended, but not a puree!
Spoon the entire mixture out onto parchment paper and fold the parchment paper over the mixture (so it is between the paper. Using your hands or a rolling pin, press the bar out until it is about 1/4” thick and cut into about 6 pieces (or whatever size bar you desire).
The bars keep the best in the refrigerator.
Naturopathic Doctor Says:
A real challenge is for those of us with busy lives to eat small frequent-yet healthy, meals. The On the Go Bar is a great bar that you can make in advance, and keep with you to eat, when there is no time to eat. These nut butters are choc full of protein, healthy fats, and the flax and coconut add some balancing fiber. And, the bars are fairly low-glycemic, with agave, apricot and cranberry as the healthy sweetners
