Nutty Shrimp

Ingredients:
- 1 1/2 lbs. raw jumbo shrimp, peeled and deveined
- 1 cup coconut milk, unsweetened, organic
- 1/4 cup crushed cashews
- 1/4 cup crushed macadamia nuts
- 1/4 cup crushed pistachio nuts
- 1/2 tsp. fresh cracked pepper
- 1 tsp. sea salt
Pre-heat oven to 375 degrees.
Peel and de-vein shrimp.
In a small bowl, pour coconut milk over peeled shrimp and allow to marinate while you crush the nuts. Place nuts in your food processor and pulse until the nuts resemble a coarse corn meal. Then place them on a large, plate.
Remove shrimp from the coconut bath and place them on a plate where you can sprinkle them with salt and pepper.
Next, individually roll the shrimp in your mixture of crushed nuts, placing them onto a baking sheet and bake for 5 minutes, carefully flip the shrimp and cook for another 3 minutes.
Turn the oven on broil and put them on the top shelf for the remaining 2 minutes so that the nut crust can become crispy. Take them out and serve!
Suggested Sides: Coconut Rice and steamed asparagus.
