Taco Lunch

  • 1 soft whole corn tortilla
  • 2 TBS cheddar or monterey jack cheese (organic)
  • 1/4 cup black beans
  • 1 TBS salsa
  • 1 slice avocado

Pack the tortillas in parchment baggies and put the sides in a glass (lockable) container or there are bento-lunch boxes available now so each ingredient can be separated.

Boston Bibb Wraps

  • 3 leaves boston bibb lettuce
  • 1/2 cup shredded chicken (or leftover meat from the night before)
  • 2 TBS yogurt (add cajun seasoning or ancho chili powder for some spice!)
  • 1/4 cup grape tomatoes, halved

Boston bibb pockets are nutritious and so fun! You can use them for basically anything, if you have leftovers from the night before, wrapping them in lettuce pockets are a great way to make them more appealing!.

Clean it:

If you are packing yourself or your kids a “hands on” lunch, tuck a note inside their lunchbox to remind them to wash their hands!

Green it:

Keep a heads up for organic, BPA and phthalate free lunch boxes this year, they are everywhere and not too pricey either. In my opinion, definitely worth the investment!
