Garden Tomato Salad
(4 servings)
Ingredients:
- 2 vine ripe tomatoes
- 2 yellow, vine ripe tomatoes
- 2 cups frisee lettuce
- 1 cup wattercress lettuce
- 1 cup Boston Bibb lettuce
- 2 TBS flax seeds
- 1 TBS walnuts
- 1 1/2 TBS fresh lemon juice
- 2 TBS olive oil
- 1/2 tsp. sea salt, large grain
- 1/4 tsp. black pepper
Wash all veggies and pat dry with a clean dishcloth.
Tear the frisee, and bibb lettuce and place in a large salad bowl with your watercress (watercress needs to be plucked from the stem, but it is not necessary to tear it because the leaves are typically small and delicate).
Next, cut tomatoes in wedges and place them in the salad bowl. Sprinkle flaxseed and walnuts over the salad mixture.
To dress the salad, whisk together lemon juice, vinegar and oil and evenly pour over your salad bowl, sprinkling with your salt and pepper. Finally, gently toss to combine and serve!
*watercress and frisee are both sharper, somewhat peppery flavored types of lettuce (toned down somewhat by the mild bibb), therefore, pairing them with the sweetness of tomato and balsamic vinegar create a refreshing balance!
