Eggplant Rolls
(8 servings)
Ingredients:
- 2 eggplants (large)
- 1 TBS olive oil
- 1 TBS fresh thyme
- 1 tsp. sea salt
- 1/2 tsp. fresh cracked pepper
- 8 cups fresh spinach
- 2 cups goats milk cheese
- 1 egg
- 2 TBS walnuts, chopped
- 2 TBS toasted pine nuts, chopped
- 1/2 tsp. dry thyme
- 4 cups marinara (homemade or jarred organic)
- 1/2 cup hard goats milk cheese
Pre-heat oven to 400 degrees.
Prepare the eggplant for roasting by slicing them into long, flat strips approximately 1/4” thick. Place eggplant strips on a baking sheet that is sprayed lightly with olive oil to create a non-stick surface. Drizzle olive oil on top of the eggplant as evenly as possible and sprinkle with salt and pepper and fresh thyme.
Bake about 10-12 minutes (so the eggplant becomes soft and pliable).
In the mean time, heat a small skillet to medium and dry toast the pine nuts, stirring constantly, this should take about 3-4 minutes. Wash and dry spinach and then run your knife through it for a rough chop.
Place pine nuts and walnuts in a mini-chop or food processor and pulse until they are finely chopped.
Toss chopped nuts together with the 2 cups of goats cheese and fresh spinach and the egg, season with salt and pepper and dry thyme, mix to combine.
When the eggplant comes out of the oven, place them on a dry rack to cool. Next, take your baking dish and ladel a think layer of sauce on the bottom of the dish. Spoon about 2 TBS worth of filling into each eggplant piece and roll up, placing each rolled piece into the baking dish. Once each piece of eggplant is in the baking dish, ladle more sauce on top and sprinkle with hard goats cheese.
Bake at 350 degrees for about 20 minutes. Serve with a side salad.
