Curried Eggplant and Chick Pea Stew

(6 servings)


Ingredients:

  • 2 medium eggplants
  • 1 cup chick peas, fresh or canned (organic)
  • 1 white onion
  • 1/2 tsp. curry powder
  • 1/4 tsp. coriander
  • 1/4 tsp. tumeric
  • 1/4 tsp. cumin
  • 1/8 tsp. cracked red pepper
  • 1/2 tsp. paprika
  • 1 clove garlic, minced
  • dash sea salt and fresh cracked pepper
  • 1 cup crushed tomatoes (organic)
  • 1 TBS extra virgin olive oil (divided)
How To Prepare

Pre-heat oven to 375 degrees.

Cut the ends off your eggplant and dice into 1” cubes. Set on a baking sheet and drizzle with olive oil (~2 tsp.) and a dash of large grain sea salt. Bake for 20-25 minutes, turning once.

Slice onion into approximate 1” cubes and saute over medium heat with the minced garlic and 2 tsp. of olive oil. Stir occasionally for 3-4 minutes. Add chick peas (if using canned allow a couple TBS of the liquid to drain into the saute pan).

 

When the eggplant is finished cooking, add to the saute pan, stir to combine with the tomato mixture and simmer another 10 minutes.

*Serve alone... or serve on top of brown rice or mixed in shredded chick for added protein.
