Aunt Pat's Rice Salad

(6 servings)


Ingredients:

  • 3 cups basmati rice, cooked and chilled
  • 2 TBS pimento pepper, chopped
  • 1 green bell pepper, finely chopped
  • 1/2 cup snow peas, thinly sliced
  • 2 TBS sweet onion
  • 2 TBS raisins
  • 2 TBS fresh parsley, finely chopped

Dressing

  • 1/4 cup olive oil
  • 1/2 cup white balsamic vinegar
  • 1 tsp. sea salt
  • 1clove garlic
  • 1 TBS local honey
  • 1/2 tsp. curry powder
  • 1/2 tsp. black pepper
How To Prepare:

Combine ingredients rice through parsley and toss.

Combine dressing ingredients in a glass jar and shake to combine. Start by pouring approximately 3 TBS of the dressing on your rice salad, toss to combine and chill in the refrigerator until ready to eat.

If more dressing is needed, add last minute.
