Apricot Glazed Salmon
(4 servings)
Ingredients:
- 2 lbs. salmon
- 1/4 cup whole fruit apricot jam
- 1 TBS water
- 2 TBS dried ginger
- 1/4 tsp nutmeg, freshly ground
- sea salt
- fresh cracked pepper
- 1 tsp. matcha (powdered green tea) *optional
Pre-heat oven to 350 degrees.
In a small saucepan, melt together the apricot jam and water over medium heat. Stir in ginger and nutmeg. Pat dry the salmon and place on a parchment covered baking sheet. Season the salmon with sea salt and black pepper and sprinkle with the matcha (try to distribute as evenly as possible).
Remove the apricot mixture from the heat and let cool 3-4 minutes. Using a spoon, distribute the glaze over the salmon and spread evenly with an offset spatula (reserve ~1 TBS of glaze in the saucepan).
Bake at 350 degrees for 15 minutes.
*For your complex carb, serve with brown rice. Use the saucepan used for the glaze to make the rice so that the reserved tablespoon of apricot glaze will subtly flavor the brown rice (top rice with fresh parsley).
