Fluffy Pancakes

(9 servings)


Ingredients:

  • 1/3 cup brown rice flour
  • 1/3 cup tapioca flour
  • 1/3 cup white rice flour
  • 2 tsp. baking powder
  • 1/2 tsp. xantham gum
  • 1/2 tsp. salt
  • 1 whole egg
  • 1 egg white
  • 1/2 TBS vegetable oil
  • 3/4 cup rice milk (or almond, cows, goats, etc.)
How To Prepare

In a medium bowl, combine dry ingredients (brown rice flour through salt). Whisk together just to combine and set aside.

In a small bowl, combine wet ingredients (egg through milk) whisk gently with a fork until mixture is combined.

Add the wet ingredients to the dry and work quickly to incorporate the ingredients together. When little to no lumps remain, the pancakes are ready!

Heat your skillet over medium and spray with a non-stick cooking spray (if you are allergic to soy, use your own vegetable oil misto to create a non-stick surface... Most sprays contain Lecithin derived from soy).

Using an ice cream scooper, spoon the pancake batter onto the heated skillet and gently push the batter out to thin it a bit. Let the pancakes cook about 2 minutes per side, or until they rise slightly and are firm to pat down with your spatula.

Remove and eat! ...or keep warm in a 200 degree oven until ready to eat!

VARIATIONS: This pancake mix is a great base, here are a few examples to vary your pancakes... TRY 1 TBS chopped almonds, 1 TBS chopped walnuts and 1/2 tsp. Cinnamon TRY 1/2 tsp. Cinnamon, a pinch of allspice, cloves and nutmeg TRY 1/4 cup mini (allergy free) chocolate chips for a sweeter treat! TRY 2 TBS shredded coconut (raw-no sugar added), a dash of nutmeg and 2 TBS of plump raisins TRY 1/4 cup finely chopped apples, 1/2 tsp. Cinnamon and 1 TBS slivered almonds TRY 1/2 sliced banana and 1 TBS crush walnuts and 1/2 tsp. Cinnamon. **Just add each of these additions to the batter and mix until combined... experiment on your own as well!
