Kristin O’Connor knows first hand the powerful affect of healthy cooking.
In her early twenties Kristin was diagnosed with multiple health issues, and at the same time, learned she was allergic to gluten, soy, and dairy. Faced with "solutions" based on taking medications for life, Kristin decided to take matters into her own hands. She sought out alternative means to heal and discovered there is a possibility to do so.
Out of the physical healing process, Kristin cooked healing meals for herself, creating one delicious recipe after the next (over 150 healthful recipes... and counting!). Kristin's passion for cooking began as a small child in her mother's kitchen. However, when matters of her health required her to eliminate allergens, eat organic and whole food ingredients, the way she cooked evolved into what she is sharing with you today. Whole food, allergy-free cooking added a new challenge that only inspired her more. Kristin found ways to create recipes, determined not to "miss out" on foods she loved, foods that comforted and satisfied.
Although Kristin trusts that organic whole food ingredients are healthy, she wanted to understand why, realizing that the more she knew about how healthy food benefited her, the more she wanted to include them in her diet.
What she did, was to search out and collaborate with health and dietary professionals (Naturopathic Doctors, Medical Doctors and Registered Dietitians). The information she gathered, along with her lifelong passion for cooking, resulted in the Nourish This website and cookbook.
Within one year of changing her diet, detoxing and practicing ways to reduce stress… Kristin began to see drastic improvements to her health.
Kristin proved; it tastes good to take care of yourself.
